Different coloured borders can be utilised in many ways (for example : a sign of a creatures status, faction, attitude or alignment; to signify different sub-types of a creature; to signify creatures with the same sub-type but with different statistics; to show creatures with different equipment; etc).
Note for DMs : Try using creature tokens with different borders where you wouldn't normally have done so if you want to keep the players guessing .. their tactics will often be completely different and in our experience adding to the unknown aspects of their game adds to the fun.
